Kale is truly one of nature's superfoods and I try incorporate kale into my families daily meals. It is a really easy to add into juices and certain dishes like a tasty salad. Let's have a look at some of my favorite kale recipes which I am sure you will enjoy as much as I do.

Crispy Kale with coronation chickpeas
For the sauce:
Put Kale in the dehydrator until crispy, following the instructions from the manufacturer.
Whilst Kale is dehydrating prepare the coronation sauce. Start by mixing the curry powder with mayonnaise then add all ingredients and give a good mix. Season to taste.
When the Kale is dehydrated and crispy begin to plate up the ingredients. Place Kale on the base and pile the chickpea coronation sauce on top. Sprinkle with almonds and cubed mango and enjoy!
Hail the Kale - Juice
First juice the kale and lemon followed by the cucumber and apple.
All the good stuff.. kale & harissa salad
Begin by marinating the kale in the lemon juice, nutritional yeast and half of the harissa powder. Really rub the juice into the leaves so that it can marinade well and soak up all the flavors. Leave for a couple of hours
While the kale is marinating, in a bowl mix the remaining harissa powder with olive oil until it resembles a dressing or paste! The stir threw the chickpeas and set aside until the kale is done marinating.
Once you have your kale ready to go, combine the rest of the salad ingredients into a bowl with the chickpeas. Serve and enjoy!
