Mexican Raw Taco's 

These refreshing raw vegan bowls full of Mexican flavors are mess-free, super tasty and full of nutrients.

I mean, you don’t even need actual bowls to serve them – just use red cabbage leaves instead!


Raw Food Lunch

For the bowls:

  • 100 grams or 1/2 cup beluga lentils
  • 1 small purple cabbage
  • 1/2 teaspoon salt
  • 1 medium-sized carrot
  • 1 medium-sized red bell pepper
  • 1/2 corn cob
  • 1/2 avocado
  • 1/2 jalapeno pepper chopped (to garnish)
  • 4 lime wedges to serve

For the guacamole dressing:

  • 1/2 avocado
  • juice of 1/2 lime
  • 1 clove garlic
  • 1/2 shallot
  • 3-4 tablespoons extra virgin olive oil
  • 1/2 jalapeno peppersalt and freshly ground black pepper

Raw Veggie Vietnamese Spring Rolls with Peanut Dipping Sauce - Raw Food Lunch

I just love how bright and colourful these rolls are, they seriously taste as fresh and flavoursome as they look!

Perfect for a refreshing lunch or snack, these spring rolls are packed full of crunch and flavor as well as being rich in essential vitamins and minerals. 

Nicely finished off with the peanut sauce to add a kick more flavor and of course being protein based, helps keep you fuller for longer.

My tip is to make a batch of the peanut sauce and use as a tasty dip for veggies like carrots and cucumber or even as a dressing for a salad.  


Raw Spring Rolls

Preparation time: 30 minutes

Servings: 4  

For the spring rolls:

  • 6 rice papers  
  • 100g /half cup chopped raw spinach
  • ½ corn cob or 1 tin of sweetcorn
  • 100g/1 cup of red cabbage (finely diced)
  • 1/2 medium cucumber (cut into batons)
  • 1 red bell pepper (cut into batons)
  • 1 carrot (cut into batons) 

For the peanut sauce:

  • 70g / 1/2 cup peanuts (ground – use food processor) 
  • 2 garlic cloves (minced)
  • 2 teaspoons ginger (minced)
  • 1 tablespoon soy sauce or tamari
  • a dash of tabasco sauce (optional)
  • drizzle of sesame oil (optional)
  • water to thin
